Ingredients:
- 2 cups of red lentils, rinsed and drained
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1 tbsp grated ginger
- 1 tbsp vegetable oil
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp ground turmeric
- Life Support Hot Sauce to taste
- 1 can (14 oz) of diced tomatoes
- 1 can (14 oz) of coconut milk
- 2 cups of water
- 1 tsp salt
- 1/4 tsp black pepper
- Fresh cilantro and avocado, chopped, for garnish
Directions:
Heat oil in a large saucepan over medium heat. Add onion and cook until softened and translucent, about 5 minutes.
Add garlic, ginger, cumin, coriander, turmeric, and Life Support Hot Sauce Cook for 1-2 minutes, stirring constantly.
Add lentils, diced tomatoes, coconut milk, and water. Stir well to combine.
Bring to a boil, then reduce heat and let simmer, covered, for 25-30 minutes or until the lentils are tender and the curry has thickened.
Season with salt and black pepper to taste.
Serve the lentil curry hot, garnished with fresh cilantro & avocado and accompanied by steamed rice or naan bread, if desired. Enjoy!
